
Valdir Dudek Lubave was born in Curitiba, Paraná, Brazil in 1971. As Head Cook, he worked in several three star restaurants of the Four Wheels Guide in Brazil, such as the Brass Rail and the Boulevard in Curitiba. He taught at the European Centre and was in charge of the cuisine in the Parthenon and Rockfeller Slaviero hotels in Curitiba, and has worked with Emmanuel Bassoleil, Laurent Sandeau, Lucciano Boseggia, Celso Freire and Denise Budant Moreau. In 2003 he accepted the invitation to be Chef of Convento de Belmonte and since then he has created gourmet delicacies from local products.
